Organic Black Eyed Peas

Organic Black Eyed Peas; the great source of protein, fiber, minerals – such as magnesium, potassium and iron.

Today we will check these black spotted white beans; Black Eyed Peas, not the band one.

For over 300 years, black-eyed peas have long been associated with good luck and are traditionally served on New Year’s Day. (last 4 days to new year eve).

 

Cooking Suggestions
 

1- Basically, place beans in a saucepan with water of cover, bring to a boil, remove from the heat , and soak for 1 1/2 hours, drain and rinse well.

 

2- Their flavor is also greatly enhanced by garlic, tomatoes, onions, and vinegar.

 

3-The texture of these small beans blends well with bulgur or rice.

 

4- Black eyed peas are very nice added to salads of strong greens or tomato salads with lots of herbs.

 

 

Black Eyed Peas Salad Recipe, Classic for All

 

1 large tomato, diced
1/2 medium red onion, finely chopped
1 small red bell pepper, finely chopped
2 tablespoons chopped green onions
2 tablespoons chopped fresh parsley leaves
1/4 cup unseasoned rice wine vinegar
1/4 cup canola oil
1/2 teaspoon sugar
Salt and freshly ground black pepper
2  cans black-eyed peas, drained

Combine the first 5 ingredients in a bowl.
In a separate small bowl, whisk together the rice wine vinegar, canola oil, sugar, and salt and pepper.
Toss all together and let marinate for at up to 8 hours in the refrigerator before serving.
